Pork Loin Al Pastor, Salsa Rice, Pineapple and Fajita Veggies
When I ran a Taqueria in Chicago, this was always one of my absolute favorite things to make. We marinate Pork loin with citrus and pineapple juice, plus a blend of delicious spices, then roast it to perfection!
